Grape Caiño Tinto
It is an autochthonous variety of Galicia whose expansion is cross-border, being common in Rías Baixas and Ribeiro and well-known also in the north of Portugal. It is a productive breed with early outbreaks and late maturation, it admits soils low in fertility (demanding in potassium) but taking into account that in cool areas it does not finish maturing. The berry is medium in size and uniform; Very dark in color (bluish-black), giving rise to small loose bunches and thick skins. Resistant to mildew, excoriation and botrytis, not so to powdery mildew.
The musts it produces are high in sugar and acidity, astringent tannin, bitter and intense in color. The wines are ruby ??tones, correct in acidity and have intense fruity aromas, which is why they are usually bottled early (to preserve these aromas). They are also usually mixed with other varietals such as brancellao or ferrón, being the caino responsible for providing structure to the resulting wines. The highest quality wines are produced in areas low in fertility, with mature vines and limiting production.
