Javier Sanz Chardonnay

The vine variety from which Chardonnay is made comes from France and has adapted well to the environment in La Seca (Valladolid).

The environment is rather poor, the soil is rocky with a clayey subsoil, which gives the wine a touch of minerals.

Straw yellow with golden hues and intensity, retains light green tones. Clean and clear, with aromas of ripe fruit and a distinctive character .. The palate is dry, medium-filled with refreshing acids, which make it an ideal drink for any occasion.

Continental climate with characteristic temperature fluctuations from high daytime with a drop of up to 20 degrees overnight. In addition, cold winters with spring rains help to achieve a characteristic acid content.

Wine production

Mechanical harvesting helps to quickly move the grapes to the cellar. Cold maceration for several hours. Stand the must for one day. After cleaning, the must is fermented in stainless steel tanks at a temperature of up to 15oC, using natural grape yeast. This low temperature ensures slow fermentation, which helps to preserve as many fruit flavors as possible. Before bottling, this wine matures on its own sediments. Cold stabilization and filtration before bottling.
