Grape Palomino

The white variety of palomino grape is an autochthonous Spanish variety, used in the production of fortified wines of sherry and manzanilla. Specifically, the variety is very predominant in Marco de Jerez, the area where these world-famous wines come from. There, it represents 95% of the vineyard.

In addition, it is a complementary variety for the production of wines in other Spanish denominations. Specifically, according to the interactive map of the distribution of Spanish grape varieties, Andalusia grouped around 6,000 hectares of vineyards of the palomino variety and more than 3,000 of fine palomino.

The two varieties are actually the same, only they are given different names. In addition, it can be called listán in other areas of the national geography.

Palomino is a late-maturing, budding variety that is highly resistant to drought and knows how to live in adverse conditions. Its clusters are large and priamidal in shape, while the berries of the grapes are spherical although irregular, of medium size and of a color that varies between green and yellow.

Today the palomino variety is the undisputed queen of the Jerez area, the triangle formed by the Cadiz towns of Jerez del Frontera, Sanlúcar de Barrameda and El Puerto de Santa María and which also includes the towns of Chiclana, Chipiona, Puerta Real , Rota, Trebujena and Lebrija.

But the dominance of the palomino in these latitudes was not always so absolute. In fact, it is known that until the end of the 19th century the presence of varietals in this area was much wider than it is today. Today the palomino is only accompanied by some remains of muscatel and Pedro Ximénez.

The fine palomino was imposed little by little and had been doing it since the 18th and 19th. But its growth and increased presence was more meteoric after replanting after the arrival of the phylloxera plague.

There are two keys to the success of this variety in this area. On the one hand, its neutral character, perfect for the elaboration of fortified wines. On the other, its perfect adaptation to the times of the year suitable for harvesting in the frame.
